Chickpea Chocolate Chip Protein Pancakes

Start your morning on a sweet note with this simple 5 ingredient homemade breakfast filled with protein. Easily made gluten free, these chickpea chocolate chip protein pancakes are fluffy and freeze well for large batches or meal prep!

This is one of my go-to breakfast/brunch meals since it’s so simple (only 5 ingredients!) high in protein, easily customizable, and gives me a reason to have chocolate in the morning. It’s vegan and gluten free (just check your chocolate chips) so anyone can enjoy it!

Chickpea Chocolate Chip Protein Pancakes

Time: 15 minutes | Makes: 12-14 Pancakes

Ingredients:

  • 2 cups Chickpea Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1 cup Almond Milk

  • 1/4 cup Chocolate Chips

Directions:

  1. Start with sifting your chickpea flour using a fine mesh strainer. You can use a rubber spatula or wooden spoon to help you here.

  2. Whisk in the baking powder and baking soda, then add in the almond milk as you whisk. you may need a bit more or less for a mildly runny pancake batter (see video).

  3. Heat a nonstick pan to medium-high heat and spray with coconut oil or a neutral vegetable oil.

  4. Pour in a scant 1/4 cup of batter into your pan to form your pancakes. Drop in some chocolate chips into each pancake while the batter is still wet. Carefully flip the pancakes when bubbles pop at the top of the batter and cook for another minute.

  5. Serve with fresh fruit of your choice and/or maple syrup. Enjoy!
